Tonight I challenged myself and made tom kha gai soup.
I love having this soup at Thai restaurants although I always struggled to remember it's name so I referred to it as Thom Yorke Soup
I found a recipe online and used some of the fair trade products I recently purchased through Trade Aid.
I was pleased with the results and the rest of the family seemed to like it.
I paired the soup with Jasmine rice and made Thai iced tea for refreshment.
